Ingredients:
Cloves garlic, minced: 4 pieces
Red or green pepper: 1 piece
Mackerel with or without the head; fish must be well cleaned from internal organs and gills: 800 grams
Salt and freshly cracked pepper: to taste
Cherry tomatoes: 1/3 cup
Thyme: 1 pinch
Olives: 100 grams
Fresh dill (or fresh parsley, or cilantro, by preference: one hand


Instructions:
1. Fix the mackerel on a large tray.
2. We cut the vegetables in small parts (we refer to red or green pepper, onion, garlic, and tomatoes) and fix them all near the fish.
3. Then strew over with salt, pepper, and thyme. Put some sunflower oil.
4. Preheat the oven to 180 Celsius degrees, then put them inside where we cook for 30-40 minutes.

It is a simple recipe to prepare, the most time being taken by boiling the potatoes. But after the dish is ready and will be placed on the plates to be served, it is worth all the effort.

Ingredients:
Olive oil extra virgin: 4 tablespoon
White or red potatoes: 600 grams
Marinated Mackerel: 250 grams
Salt and freshly cracked pepper: to taste
Cherry tomatoes: 8-10 pieces
Pickled cucumbers: 200 grams
Pickled bell peppers or fresh red pepper: 100 grams
Medium eggs: 4 pieces
Olives: 100 grams
Fresh dill (or fresh parsley, or cilantro, by preference: one hand


Instructions:
1. To prepare the oriental salad, we first need to prepare the ingredients that will be mixed to obtain the final meal.
2. Boil the potatoes in water in a saucepan after washing them beforehand. Let it cook with the skin on for about 25-30 minutes, until you try it with a fork. If it easily penetrates the potatoes, it means that they have been cooked.  Boil the 4 eggs in another larger saucepan or kettle; boil until they remain firm, that is, about 4 minutes after the water has started to boil.
3. After they have cooled a little, we will peel the potatoes and eggs.
4. In a large bowl, we will cut the potatoes into suitable cubes. We will also add the eggs cut into small pieces.
5. We will also clean the pieces of marinated mackerel from the skin and bones from the inside and add small pieces to the salad bowl.
6. We will cut the pickled cucumbers into rounds, and the pickled bell peppers into thin slices and add them to the salad.
7. We will wash the cherry tomatoes and then cut them in half. We will add them to the salad bowl.
8. Season the salad with salt and pepper and sprinkle with fresh dill or parsley or green coriander.
9. Gently mix all the ingredients and put the bowl in the cold, after which it can be served.

You can put the mackerel oriental salad cold in the refrigerator for 10 minutes and then serve it cold, according to your preferences.

This is a recipe that I like very much and the final dish will be very tasty.This chicken Tikka masala recipe with rice has its origin in Indian cuisine and is based on the chicken breast, the sauce spiced with ingredients such as turmeric (or Curcuma), curry, and anise that give the dish a special aroma and taste. Additionally, the Garam masala spice mix provides an explosion of flavors.
I prepare this curry chicken recipe in my own way, which the whole family enjoys in the end. The recipe is easy to prepare and the result will be spectacular and you and those you will prepare it for will definitely be delighted.

Ingredients:
Chicken breasts, boneless, skinless, cut into cubes (you can also use 6 boneless chicken legs): 2 pieces
Medium-sized onions, finely chopped: 2 pieces
Suitable red peppers, finely chopped: 1 pc
Salt: to taste
Cloves of garlic, cleaned, crushed: 4 pieces
Finely chopped hot pepper: 1/4 piece
Cooking cream (20% fat) for the sauce: 200 ml
Tomato juice, for the sauce: 200 ml
Turmeric: 2 teaspoons
Ground cumin: 1 teaspoon
Ground white pepper: 1 teaspoon
Curry: 1 teaspoon
Freshly grated ginger: 2 teaspoons
Sweet paprika: 1/2 teaspoon
Crushed star anise: 1 piece
Hot pepper: 1/2 teaspoon
Sunflower oil: 1/2 cup
Garam masala mixture (for more extra flavor): 2 teaspoons
Basmati or jasmine rice: 1 cup


Directions how to prepare the Chicken Tikka Masala recipe:
1. Anise, white pepper, cloves, and cumin are ground in a mortar.
2. Preparing the chicken breast (or boneless chicken legs).Put half the amount of sunflower oil in a high pan and fry the chicken breast cubes until they start to get a little crust and a darker color.
3. In another pan, heat the onion and the pepper, after having finely chopped them before.
4. After sauteing the onion and pepper, place them in the high pan over the fried chicken breast.
5. To prepare the sauce, add the medium fried chicken and the cooking cream, and the tomato juice and leave on low heat for about 10 minutes to homogenize.
6. Add the grated ginger, minced garlic, and ground hot pepper together with the other ingredients: turmeric (curcuma), cumin, ground white pepper, curry, salt, sweet paprika, hot paprika, anise, cumin, and cloves so that the sauce penetrates with all the flavors. Also, for more flavor, add 2 teaspoons of Garam Masala. Leave for another 5 minutes for the flavors to penetrate and then turn off the heat.
7. How to eat the prepared chicken? The pieces of chicken breast with the Tikka Masala sauce are displayed on a plate next to the basmati or jasmine rice that I cooked before and it can be enjoyed, served.

About Garam Masala Mix:

If we haven't bought it from the store, we can prepare the Garam Masala spice mix at home. To prepare the mixture we need the following spices:

-1 teaspoon of ground black or white pepper
-1 teaspoon ground cumin
- 1 teaspoon of ground cloves
- ½ teaspoon ground cinnamon (or 1/2 of a ground cinnamon stick)
- ½ teaspoon of ground coriander
- ½ teaspoon ground cardamom
-½ teaspoon ground nutmeg.
We then put the mixture in a jar with a lid in the pantry and use it for future chicken Tikka Masala dishes.

Find below what you must know when you buy a steak


1. What cuts of meat to choose?

 Sirloin is a fine choice due to its tasty, melt-in-the-mouth succulence. Good sirloin has just the right amount of fat and nice marbling. 

Rump steak is slightly cheaper than sirloin, but it’s still a great steak for barbeque or frying, with more flavor than sirloin. 


2. A good beef should be a deep red color.


3. Check the beef has good marbling – little streaks of fat running through the meat. This melts when heated and helps the steak to baste itself from within as it cooks.


4.  A good layer of creamy-white fat around the top of sirloin steaks is essential.



How to cook the perfect steak:


1. Heat your griddle or frying pan, over a high heat, until smoking hot.


2. Lightly brush the steak with a little olive oil and season with sea salt and freshly ground black pepper.


3. Don’t griddle more than two steaks at a time, and keep them spaced well apart. Why? If you add more than two steaks to the pan at once, the temperature will drop and the steak will stew, rather than fry.


4. Don’t turn the steaks until good seared markings are achieved, then turn them over and cook on the other side.


5. You must let the steak rest for about 3 minutes before serving, to allow the juices that have been drawn to the surface to relax back into the meat.


How long is necessary to cook a steak?


These timings are based on cooking a sirloin steak that’s about 2 cm thick. Cooking times will vary depending on the type and thickness of the steak and how hot your pan is.


Blue: 1 minute on each side


Rare: 1½ minutes on each side


Medium rare: 2 minutes on each side


Medium: 2¼ minutes on each side


Medium-well done: 2½ – 3 minutes on each side.
