If you don't have Boursin cheese, you can use goat cheese with some chopped fresh herbs mixed in. You will find the Bours in easiest to spread if it has been sitting at room temp for 10 minutes or so.

Ingredients

  • 2 to 4 slices of French or Italian loaf bread
  • Herbed Boursin cheese, about 2 Tbsp per slice of bread
  • 1 medium to large vine-ripened tomato
  • Coarse salt (like fleur de sel or even just Kosher salt)
  • Freshly ground black pepper

Method

1 Toast the bread.
2 While the bread is toasting, slice the tomato into 1/4-inch slices.
3 Once the bread is lightly toasted, spread one side with Boursin cheese. Top with a couple slices of tomato, overlapping if necessary. Sprinkle with coarse salt and freshly ground black pepper.
Eat immediately.
Yield: Serves 2 to 4 as a snack.

This sandwich is a Southern twist on a BLT swapping out the ripe red tomatoes for crispy fried green tomatoes and adding some tasty pimento cheese.

Ingredients
  • 1 medium-sized green tomato, sliced 1/4 inch thick
  • 1/2 cup buttermilk
  • 2-4 strips of bacon
  • 1/4 cup masa harina (corn flour) or flour
  • 1/4 cup cornmeal
  • creole seasoning or salt and pepper
  • oil or bacon grease for frying
  • 2 slices of bread
  • 2 leaves of lettuce
  • 2 tablespoons pimento cheese
Directions
  1. Soak the green tomato slices in the buttermilk for at least 30 minutes at room temperature.
  2. Cook the bacon and set it aside on paper towels to drain.
  3. Mix the masa harina, cornmeal, and creole seasoning and place it in a wide and shallow dish.
  4. Pull the tomato slices out of the buttermilk and dredge them in the cornmeal mixture.
  5. Fry the tomato slices in oil over medium heat until golden brown on both sides, about 3-4 minutes per side, and set aside to drain on paper towels.
  6. Assemble the sandwich and enjoy.

INGREDIENTS for the recipe:

2 plum tomatoes, cored and thinly sliced crosswise
Kosher salt, to taste
1 (5-oz.) can olive oil-packed tuna, drained
4 scallions, thinly sliced
½ small red bell pepper, stemmed, seeded, and thinly sliced into 2" lengths
⅓ cup extra-virgin olive oil
1 tbsp. Dijon mustard
1 (7") round rustic bread loaf, split (about 20 oz.)
1 small bulb fennel, cored and thinly sliced crosswise
1 small cucumber, thinly sliced crosswise
2 hard-boiled eggs, thinly sliced crosswise
8 oil-cured anchovies, drained
10 salt-cured black olives, pitted and halved
Freshly ground black pepper, to taste

INSTRUCTIONS:

1. Sprinkle tomato slices liberally with salt and transfer to a colander; set aside to drain for 30 minutes. In a small bowl, break up tuna with a fork and stir in scallions and bell pepper; set aside. In another small bowl, whisk together oil and mustard; set dressing aside. Scoop the insides from the bread loaf and discard or reserve for another use. Place tomatoes evenly over the bottom of the bread and then top with fennel and cucumbers; spread tuna mixture over top, and then top with egg slices, anchovies, and olives. Pour dressing evenly over ingredients, and season with salt and pepper; cover with top of bread, pressing lightly to compact.

2. Wrap the sandwich tightly in plastic wrap and place on a baking sheet; top with another baking sheet and weigh with a cast-iron skillet. Refrigerate for at least 4 hours or overnight. Slice into quarters to serve.

Ingredients for this recipe:


2 pieces of Mild Italian Sausage Links Removed From Casings

1 Crusty Baguette of Bread, Cut Into 12 (1/2 inch) Slices

Extra Virgin Olive Oil

1 1/2 Cups Shredded Caciotta Cheese 

1 1/2 Tablespoons Finely Chopped Fresh Sage

Cracked Black Pepper
Yield: Serves 4 to 6 Prep Time:10 mins Cook Time:20 mins

Directions:

Preheat the oven to broiler, place sausage meat in a frying pan, and cook until lightly browned, about 5 to 7 minutes, breaking it up with two forks as it cooks.

Place the bread slices on a baking sheet, and brown lightly under the broiler on both sides.

Brush one side of each of the bread slices with olive oil.

Combine the cheese, sausage crumbles, sage, and cracked black pepper in a bowl

Preheat the oven to 400 degrees F.

Cover each bread slice with the cheese mixture, then place the tray in the oven and bake until hot and bubbly, about 8 to 10 minutes.

Another fall treat is green tomatoes, which make a brief appearance at the farmer's market when the weather threatens to destroy the tomatoes before they ripen. Ever since I first discovered them I eagerly await them each fall and this weekend they made their first appearance. Inevitably the first thing that I do with them is to make some fried green tomatoes, which is a Southern dish where slices of green, unripe, tomatoes are coated in cornmeal and fried until crispy. After an initial batch of fried green tomatoes, I wanted to combine them with another Southern delicacy, pimento cheese, a combination of cheddar cheese, pimentos, and mayonnaise, and make, you guessed it, a fried green tomato and pimento cheese sandwich!
The pimento cheese was practically made for use in grilled cheese sandwiches, especially when all melted and good and combined with crunchy and tangy green tomatoes and salty bacon! Pimento cheese, where have you been my whole life?

1. Bacon and Fried Green Tomato Pimento Grilled Cheese - sandwiches

Ingredients:

  • 1 medium-sized green tomato, sliced 1/4 inch thick
  • 1/2 cup buttermilk
  • 2-4 strips of bacon

  • 2 strips bacon, cooked
  • 1/2 cup pimento cheese (see below)
  • 2 slices of bread
  • 1 tablespoon butter

Directions:

  1. Soak the green tomato slices in the buttermilk for at least 30 minutes at room temperature.
  2. Cook the bacon and set it aside on paper towels to drain.
  3. Mix the masa harina, cornmeal, and creole seasoning and place it in a wide and shallow dish.
  4. Pull the tomato slices out of the buttermilk and dredge them in the cornmeal mixture.
  5. Fry the tomato slices in oil over medium heat until golden brown on both sides, about 3-4 minutes per side, and set aside to drain on paper towels.
  6. Heat a pan over medium heat.
  7. Butter the outside side of each slice of bread, place one slice in a pan buttered side down, spread on half of the cheese, then top with the fried green tomato slices and bacon followed by the remaining cheese and slice of bread, buttered side up.
  8. Cook until golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
