This is a recipe that I like very much and the final dish will be very tasty.This chicken Tikka masala recipe with rice has its origin in Indian cuisine and is based on the chicken breast, the sauce spiced with ingredients such as turmeric (or Curcuma), curry, and anise that give the dish a special aroma and taste. Additionally, the Garam masala spice mix provides an explosion of flavors.
I prepare this curry chicken recipe in my own way, which the whole family enjoys in the end. The recipe is easy to prepare and the result will be spectacular and you and those you will prepare it for will definitely be delighted.

Directions how to prepare the Chicken Tikka Masala recipe:
1. Anise, white pepper, cloves, and cumin are ground in a mortar.
2. Preparing the chicken breast (or boneless chicken legs).Put half the amount of sunflower oil in a high pan and fry the chicken breast cubes until they start to get a little crust and a darker color.
3. In another pan, heat the onion and the pepper, after having finely chopped them before.
4. After sauteing the onion and pepper, place them in the high pan over the fried chicken breast.
5. To prepare the sauce, add the medium fried chicken and the cooking cream, and the tomato juice and leave on low heat for about 10 minutes to homogenize.
6. Add the grated ginger, minced garlic, and ground hot pepper together with the other ingredients: turmeric (curcuma), cumin, ground white pepper, curry, salt, sweet paprika, hot paprika, anise, cumin, and cloves so that the sauce penetrates with all the flavors. Also, for more flavor, add 2 teaspoons of Garam Masala. Leave for another 5 minutes for the flavors to penetrate and then turn off the heat.
7. How to eat the prepared chicken? The pieces of chicken breast with the Tikka Masala sauce are displayed on a plate next to the basmati or jasmine rice that I cooked before and it can be enjoyed, served.

About Garam Masala Mix:

If we haven't bought it from the store, we can prepare the Garam Masala spice mix at home. To prepare the mixture we need the following spices:

-1 teaspoon of ground black or white pepper
-1 teaspoon ground cumin
- 1 teaspoon of ground cloves
- ½ teaspoon ground cinnamon (or 1/2 of a ground cinnamon stick)
- ½ teaspoon of ground coriander
- ½ teaspoon ground cardamom
-½ teaspoon ground nutmeg.
We then put the mixture in a jar with a lid in the pantry and use it for future chicken Tikka Masala dishes.

Zucchini is still plentiful and cheap these days and I have been trying to enjoy as much of it as I can while it is still available. I recently came across a recipe for chicken enchilada stuffed zucchini on Gina's Skinny Taste that sounded so good that I just had to try it! It has been a while since I last made stuffed zucchini and a chicken enchilada-style stuffing sounded amazingly good! Don't let the time it takes to make these chicken enchilada stuffed zucchini put you off; they are quite easy to make and well worth the effort!

Servings: makes 4 servings

Ingredients

4 medium zucchinis, cut in half lengthwise

1 tablespoon oil

1 small onion, diced

2 cloves garlic, chopped

1 teaspoon cumin, toasted and ground

1 tablespoon chipotle chili powder or to taste

1 cup cooked and shredded chicken

1/2 cup corn

1 teaspoon oregano

1 1/2 cups enchilada sauce (see below)

1 handful cilantro, chopped

1/2 cup cheddar, shredded

1/2 cup mozzarella, shredded

Directions

1. Place the zucchini halves in boiling water for a minute, remove and let cool.

2. Hollow out the zucchini halves with a small spoon reserving the removed flesh.

3. Heat the oil in a pan over medium heat.

4. Add the onion and saute until tender, about 5-7 minutes.

5. Add the garlic, cumin, and chili powder and saute until fragrant, about a minute.

6. Add the reserved zucchini flesh, chicken, corn, oregano, 1/2 cup of enchiladas sauce and cilantro, cook for a few minutes and remove from heat.

7. Spread 1/4 cup of the enchilada sauce over the bottom of a large baking dish, place the zucchini in the dish, stuff them with the filling and top with the remaining enchilada sauce and the cheese.

8. Bake in a preheated 350F oven until the zucchini is nice and tender and the cheese has melted, about 30-40 minutes.

A quick and easy homemade enchilada sauce.

Cook Time: 15 minutes

1 tablespoon oil

1 small onions, diced

1 (28-ounce) can of tomatoes

1-2 chipotle chilies in adobo sauce

1 teaspoon oregano

1. Heat the oil in a pan over medium heat.

2. Add the onion and saute until tender, about 5-7 minutes.

3. Add the garlic and cumin and saute until fragrant, about a minute.

4. Puree the onions, garlic, chilies, and tomatoes in a food processor and return to pan.

Ingredients

  • 1 to 2 large yellow onions, chopped, (3 cups)
  • 2 Tbsp unsalted butter
  • 3 Tbsp olive oil
  • 5 Tbsp pomegranate molasses
  • 1/2 pound walnut halves (about 2 cups)
  • 2 lbs boneless skinless chicken thighs and/or breasts, trimmed of excess fat, cut into medium size pieces, patted dry and salted
  • 2 cups chicken stock
  • 2 Tbsp plus 2 teaspoons of sugar
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • Salt
Method
1 First toast the walnuts. You can do that one of two ways. You can either spread them out in a single layer in a large skillet, and toast them on medium high heat, stirring frequently until lightly toasted, or you can spread them out in a single layer in a baking rimmed baking sheet, and toast at 350°F in the oven for 8 to 10 minutes. In either case, once toasted, remove from heat and allow to cool. Once cool enough to handle, pulse in a food processor or blender until finely ground.

2 In a large pan, heat 1 tablespoon of butter and 2 tablespoon of olive oil over medium-high heat. When the butter has melted, pat the chicken pieces dry again and place the chicken pieces in the pan, working in batches if necessary to not crowd the pan, and cook until golden brown on all sides. Sprinkle the chicken with salt while they are cooking.
3 Use a slotted spoon or tongs to remove the chicken from the pan, set aside. Add a tablespoon of butter and a tablespoon of oil to the pan. Lower the heat to medium low. Add chopped onions to the pan and sauté until translucent, stirring on occasion to release the browned bits from the bottom of the pan.

4 Return the chicken pieces to the pan with the onions. Pour 2 cups of chicken stock over the chicken and onions. Bring to a boil, reduce to a simmer, cover and simmer gently for 30 minutes.

5 Stir in the ground walnuts, pomegranate molasses, sugar, and spices. Cover and cook on very low heat for 1 hour, stirring every 20 minutes or so to prevent the walnuts from sticking to the bottom of the pan.
6 Remove from heat and adjust sugar/salt to taste. At this point, the chicken should be fall-apart tender.
Garnish with pomegranate seeds. Serve over parsi pulao or other favorite rice.
Yield: Serves 6-8.

Directions:

1. Preheat the oven to 425 degrees.
2. Remove chicken giblets out of the cavity and rinse the chicken. Pat dry with paper towels.
3. Mix together the butter and 2 cloves of minced garlic together until well combined. Carefully, loosen the skin covering the breasts and coat the breasts with the butter mixture.
4. Coat the chicken with olive oil cooking spray and season the entire bird with sea salt, freshly cracked pepper, and garlic powder, to taste.
Season the inside of the cavity with sea salt, freshly cracked pepper, and garlic powder, to taste then place the onion, garlic cloves, and fresh parsley into the cavity. Place the bird on a roasting rack in a roasting pan.
5. Place a meat thermometer into the thickest part of the thigh without touching the bone. Place the chicken into the oven and roast for 1 1/2 hours or until the temperature reaches 180 degrees.
6. Remove the chicken from the oven and let the bird rest with a tin foil tent for at least 10 minutes before carving. That's all.

    Ingredients for the recipe:

    • 1/3 cup all-purpose flour
    • 1 broiler/fryer chicken (3 to 4 pounds), cut up
    • 2 tablespoons canola oil
    • 2 medium onions, cut into wedges
    • 1 medium green pepper, cut into strips
    • 1 jar (6 ounces) of sliced mushrooms, drained
    • 1 can (14-1/2 ounces) diced tomatoes, undrained
    • 2 garlic cloves, minced
    • 1/2 teaspoon salt
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon dried basil
    • 1/2 cup shredded Parmesan cheese

    Directions:

    • Place flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown chicken in oil on all sides.
    • Transfer to a 5-qt. slow cooker. Top with onions, green pepper, and mushrooms. In a small bowl, combine the tomatoes, garlic, salt, oregano, and basil; pour over the vegetables.
    • Cover and cook on 160 C for 1/2 hour or until chicken juices run clear and vegetables are tender. Serve with cheese or potatoes.
